When I say I have been having these pancakes everyday for the last year, I would not be lying! There was a time right after I had Isabella when I was having these in the morning AND in the afternoon as a snack! I have been away on holidays for the last 3 weeks around Europe and even though you walk around a lot, finding healthy vegan food is not always easy, so its really good to be home and back on track!
Anyone who does not have dairy in their diet knows alternative milk can get pricey, especially if you want it to be naturally sweetened and organic. There has been a couple of recipe disasters before this but I have to say I found this to be the the easiest, creamiest and AND much cheaper than a store bought version, so definitely a win!
Also can you ever have enough coconut in your diet? or body? or face! Never.
I recently have been a major oatmeal ADDICT. I love this recipe so much I sometimes have it for breakfast and dinner 🙂 It is just so creamy, filling and of course easy to make!
