Scrambled Tofu

Most days I wake up generally craving something sweet, my go to  breakfast is usually mangoes or papayas. But there are those days, especially on the weekend when I want to spend more time preparing my brekky or I’m craving a savoury breakfast FullSizeRender Tofu scramble can sound scary when you are used to egg scramble but this is as close to the real thing as it gets! Also can be adapted to any taste you like, I myself was inspired to add in some middle eastern inspired flavours such as cumin and koosa (Lebanese Zucchinis) *Serves 1 Ingredients:

  • 1 cup extra firm tofu
  • 2 small zucchinis sliced
  • 1 onion, diced finely
  • 3 garlic cloves
  • 2 scallions chopped finely
  • 1 tbsp nutritional yeast
  • 3/4 tsp tumeric
  • 1 tsp cumin
  • 1 tsp olive oil
  • Salt & Pepper to taste

Preparation: 

  1. Start by drying the tofu dry with a towel, crumble with your hands and set aside
  2. In a skillet add 1 tsp of olive oil.  Add onion, garlic, zucchinis and scallions. Mix for 3-5 minutes
  3. Next add in the scrambled tofu and spices

Optional veggies you can add in: Mushrooms, broccoli  or spinach.I served mine with a side of tomato and organic baked beans! YUM! Sahtein!
