Raw Carrot Cupcakes

Sticking to my clean eating this January, when I wanted something sweet I knew raw dessert was the way to go! Inspired by FullyRawKristina ,I attempted the raw carrot cakes.

I couldn’t believe something so simple could taste SO good!!

Ingredients:

  • 2 Cups of Shredded Carrots
  • 1 Cup Dates
  • Half Cup of walnuts or pecans
  • 1 tsp Cinnamon
  • 1/4 tsp Turmeric

Preparation:

  1. In a food processor, mix in all the ingredients
  2. Place them in cupcake holders
  3. Place in the fridge for 30 mins

  1. I just did these and they tasted delicious on the spot. However, after staying in the fridge for 30 mins they went a bit soggy and even so the next day. What went wrong? I also had them in paper cupcake holders not silicon ones like the picture
