Garlic Mushroom Quinoa

Today celebrates my one year of blogging! Looking back I had no idea where I would be in a year or if I would still be blogging.Im so happy to say I am still as passionate about all of it as I was one year ago if not more 🙂 Now back to what started all this, the food:


Garlic and mushroom are one of those combinations that you cannot beat! Add in some quinoa and you have yourself a gluten free, vegan and low fat quick dinner!


  • 1 cup quinoa
  • 3 cups  mushrooms, thinly sliced
  • 4 cloves garlic sliced and 1 crushed
  • 1 cube mushroom stock
  • 1 tsp olive oil

  1. In a large saucepan add 2 cups water, cook quinoa according to package instructions; set aside.
  2. Heat olive oil in a large skillet over medium high heat. Add mushrooms, garlic , and cook, stirring occasionally, until tender, about 3-4 minutes; season with salt and pepper if needed, to taste. Stir in quinoa until well combined
