Vegan Quinoa Sushi

No one should ever have to give up sushi regardless of what diet you are on! Paleo, vegan or vegetarian  you can make it work –  this is what I love about these little guys, they can easily be customizable depending on what you like to eat.

I was a little skeptical of using quinoa at first but with the added rice vinegar and maple syrup it even tasted better than the rice -I have been converted 🙂

Ingredients:

  • 2 nori wraps
  • 1/2 cup quinoa
  • 1/2 avocado
  • 1/2 small cooked beetroot
  • 1/2 tbsp of maple syrup
  • 1 tbsp rice vinegar

Preparation:

  1. Cook the quinoa according to the box instruction. Once done mix in the rice vinegar and maple syrup and leave them on the side to cool down
  2. Meanwhile cut your beetroot and avo into slices as shown below
  3. Place the quinoa, which should resemble sticky rice at this point, in the nori wrap and fill in with veggies and roll

The trick here is to use a good knife when cutting the sushi and make sure the quinoa is quite sticky. There are many videos on YT that will do a quick show on how to roll the sushi also 🙂
