Hello! I have not been as active as I wanted to be , I went away on a mini holiday to Georgia where the food and its people were oh so lovely! Definitely some Georgian inspired dishes coming up, they are vegetarian and vegan friendly cuisine so I was very satisfied 🙂
A lot of their food revolves around fresh vegetables and they love stuffing it with walnuts, that did win me over! Did I also mention they are big on wine? Good food, lots of wine and greenery. What’s not to love?
After a holiday that revolves around food, atleast all mine seem to do 😉 I needed some basic dishes to get me back on track for a healthy month before the wedding. This is as simple as it gets, veggies and oven is all you need!
- 2 beetroots
- 2 carrots
- 2 sweet potatoes
- 6 small zucchinis
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp chilli (Omit if you don’t like spicy food)
- 1 tsp cinnamon
- 1 tsp ginger
- Salt & Pepper to taste
1. Preheat the oven to 160 C.
2. Chop up all the veggies
3. Mix chopped up veggies with all spices, 1/4 cup of water and olive oil. The water will help all the spices come together
4.Bake for 50 mins or until soft
