Red Curry Lentil Soup

Since I have made this soup, I have had to make it again 3 times Β in 2 weeks because it has become every ones favorite!

I’m in LOVE with red curry sauce so I try to add it whenever possible πŸ™‚ Also if you had seen my last lentil soup recipe, you know that lentils are always plentiful in my house so I try to use them whenever possible

Ingredients :

1 cup red lentils
1 onion
3 garlic cloves
3 tomatoes – chopped into chunks
1 cup full fall coconut milk (organic if possible)
4 cups water
1 tbsp red curry spice
1/2 tsp ginger powder
1 organic vegetable stock (optional)

  1. Add in all ingredients into a big pot – cook for about 40 minutes or until the lentils are soft
  2. Move to blender and puree

  1. Just did a version of this using some left-over balti curry paste rather than red curry spice, very tasty (and fire-breathingly hot!). Just the thing for a damp day in England… πŸ˜‰
