Do you know what is better than 5 ingredient recipes? Not much, not much in this world is better than 5 ingredient recipes 🙂 !
2 cups brown lentils
1 potato – cut in cubes
1 onion – chopped into 4 pieces
1 organic vegetable stock
2 tbsp cumin
Salt & Pepper to taste ( Optional )
- Add in the lentils with 4 cups of water,along with the onion and bring to boil for about 40 minutes or until the lentils are soft
- Preheat the oven to 160 degrees C. Cut the potato in cubes, spice up with 1 tbsp of cumin and bake for 40 minutes or until soft ( You have the option to add in 1 tbsp of olive oil if needed)
- Once the lentils are soft, bring to a blender and puree. I like to leave 1/2 cup of lentils as they are to make the soup chunky and puree the rest.
- Add in the potatoes when done
