Green Quinoa Salad

Still in line with vegetarian January, I try to eat vegetarian meals most of the week. I was pretty busy this week so this was the perfect dish to put together in less than 30 minutes. And, this might sound a bit strange, but I am a big fan of brussel sprouts! I usually pile them up on my plate at Christmas dinners!

My family has never really seen them so they call them tiny cabbages ๐Ÿ™‚



  • 1 cup of Quinoa
  • 2 cups of brussel sprouts
  • 2 cups of green peas
  • 1/2 cup of Edamame beans
  • 1/3 cup of cashews
  • 1 vegetarian cube stock
  • 1 tbsp of Olive Oil
  • Juice of half a lemon

Optional add ins :

  • Pomegranate seeds
  • Apricots
  • Raisins


  1. Cook Quinoa as per instruction adding in the stock cube for extra flavor.Meanwhile steam the Brussels sprouts in the steamer and the edamame. Also boil the peas till about soft that should take about 10-15 minutes.
  2. Once all is cooked mix them all together adding in the olive oil and lemon juiceย and sprinkle the cashews on top .I like them toasted, to do that just put them in a skillet for 5 minutes


3.Add in any of the optional treats, I usually like a little sweetness in all my dishes and I feel this works really well with Quinoa. I decided to go for pomegranate and it was very yummy!

    • There is no perfect formula, it really goes down to what you prefer. I always prefer less oil and more pomegranate molasses but that is me, trial and error is how to go about it, good luck!
