Pistachio Date Bites

I am so amused by the so many things we can do with dates, they can be used to sweeten up any recipe if used the right way. We are also very lucky to have an abundance of dates here in the UAE. These little ones are so easy to make and look so pretty!


Oh and did I mention just 3 ingredients?!! They are :


  • 20 Pitted dates
  • 1 tbsp of nut butter (In my case I used macadamia and almond butter but any nut butter would work)
  • 1/3 cup of crushed pistachios


  1. Place all the pitted dates in the blender along with the nut butter and blend for about 2 minutes or until you get a smooth consistency.
  2. After that start forming the ball shapes, if things are getting sticky you can add some oil to your hands. Once formed roll them in the crushed pistachios
  3. Place in the freezer for about 20 minutes. If you have the will power not to eat all of those on the spot they can be saved in the fridge for later

You can also roll them in desiccated coconut. Same recipe just sub the pistachios with the desiccated coconut

  3. These are wonderful! I just started trying to using dates (thanks Pinterest!) so these were easy and delicious to make. Thank you so much for the recipe. My 2 year old son enjoyed trying to make these with me. 🙂

      • Absolutely! It’s tough finding stuff he will eat (he’s 2), so I just keep trying all new things and hope a few stick. I will definitely be adding these in to the rotation, he had two for breakfast 🙂 Thanks again!

  4. I made these tonight! They are so yummy & I seriously dislike dates! It is the shape and texture that I can not stomach so having them blended into something helps. I added the pistachios into the mix, with some added supplements (bee pollen, hemp seeds) and used almond butter w/honey (Justins) … then rolled them in coconut. Splendid!!! These are going to me a huge staple item for me this Ramadan for sure!

      PS: Love the addition of bee pollen and hemp seeds, might try that myself!
