Beetroot Hummos

Happy Happy New Year!

So the challenge this January will be a vegetarian diet for a month, more than anything I am doing it to exercise my will power, which is much needed after December Binge! So lots and lots of veggie dishes coming up, to start with is this pretty beetroot hummus.

I wanted to take a classic Arab dish and add a little twist

Ingredients :

  • 1 large beetroot
  • 2.5 cups of chickpeas
  • 2 tbsp tahini
  • 3 tbsp white vinegar
  • Juice of half a lemon
  • Salt to taste


  1. Start with boiling the chickpeas for about 30 minutes till they are soft and do the same for the beetroot.
  2. Once the beetroot and the chickpeas are done, place all ingredients in a blender, leave about one slice of beetroot for garnishing on top, and blend till smooth or desired consistence.

I served these with some cucumber and carrot slices. Do you have any January challenges?
