This right here is amaze-balls as my friend Lara would say. Just the name alone sounds so chic and will impress any guest, they will have no idea how easy this is! Except if they read this blog hehe 🙂 Also this would make a great present.
I cannot wait to start using this on all my salads. I have decided the challenge for this January will be a vegetarian one, meaning no meat/fish/chicken for a month! Might sound easy, but as I mainly follow a low-carb diet it will be tricky.
I will have to be creative with my recipes, so expect a lot of veggie dishes in the upcoming month and see how I progress with my veggie January challenge
Back to the amaze-balls Date Infused Balsamic
- 3/4 cup warm water
- 1/2 cup pitted dates
- 3/4 cup balsamic vinegar
- Salt to taste
- Soak dates in warm water for about 10 minutes to soften. In a blender, combine the dates, water (I used the same water which had the dates soaking in), balsamic vinegar and a pinch of salt. Blend until smooth.
- In a small sauce pot, bring the mixture to a gentle boil, then reduce heat to low. Simmer on low until sauce is reduced and thickened, stirring frequently. This should thicken about 2 minutes after, stop after reaching desired consistency.
- When done, let it cool down before drizzling it over your favorite salad. I will be featuring a salad later this week where I use this.
