Ginger Spiced Pear Bread

This bread is so moist and christmasy (Is that even a word?) and ginger in cake is just amazing!

Take this with you to a Christmas party and you will be sure to impress as it has all the usual christmas spices but also some unexpected ingredients such as ginger

Ginger spiced pear bread

Feeling super christmasy? Then put this on while baking too, cake should be done by the time the album is finished ūüôā

Ingredients (1 loaf)

  • 1 cup all purpose four
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup agave syrup
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 2 Eggs
  • 1/2 cup unsweetened applesauce (Recipe here :¬†https://zaatarandquinoa.com/2013/12/23/homemade-unsweetened-apple-sauce/¬†)
  • 2 tbsp of oil
  • 1 teaspoon vanilla extract
  • 2 ripe pears, diced small
  • 1/3 cup crystallized ginger, minced

Preparation:

  1. Preheat the oven to 180 degrees C. Combine all the dry ingredients in a large mixing bowl,  Set aside.  Select two ripe pears and dice into very small pieces and the ginger pieces. (The smaller the better)
  2. Add applesauce, oil, and vanilla to the small dish, and whisk to combine.
  3. Pour the wet ingredients into the bowl of dry ingredients, and mix until combined.  Using a spatula, fold in the crystallized ginger (reserve about a tablespoon) and fresh pear.
  4. Pour batter into a greased loaf pan, and sprinkle the remaining crystallized ginger on top of the batter.
