Roasted Tomato Soup

My dad came back 2 days ago with a big box of tomatoes, when I asked why he just said well they were for sale so I couldn’t say no, I thought fair enough! With so many tomatoes, my mind thinks up the perfect easy and healthy recipe!

This is a great soup in the summer to enjoy and is so FRESH! 🙂

Ingredients :

  • 14 ripe tomatoes
  • 1 cup of steamed sweet corn
  • 3 garlic cloves
  • 2 tsp olive oil
  • 1 tsp of red curry sauce
  • 1 cup of vegetable broth
  • ½ tsp dried Thyme
  • Salt

Preparation:

  1. Preheat the oven to 180 degrees C. Cut the tomatoes into half.
  2. Place them on a baking tray with the cut side up. Drizzle with  olive oil, salt and dried thyme and roast it till its cooked soft and slightly brown on top.
  3. Let it cool completely and blend it into a puree, add in rest of ingredients.You can skin the before pureeing if you like but I like the seed, skin and everything else in my soup.

Also bought some rosemary in my last trip to the Garden Center market on Saturdays that will go perfect on top of my soup

After pureeing add everything back into the pot and let it sit on medium heat for 10 mins and voila!
